A few words from our amazing cook Frederick:

We are coming closer—“only” some 540 miles until Faial, island of the Azores, where we plan to stay for one or two days—depending on the weather.

Everything here on board depends on the weather and the conditions of the sea. For me, as a cook, my menus depend also on the weather: When the sea is calm and flat, like the last days, I can do what I want. That’s luxury. When the TWISTER starts to “twist” in the wind, on the waves, everything in my galley joins the dance. And cooking becomes a very tricky exercise…

What are my strategies here? I have two: Anticipation and flexibility. Mostly, and especially in friendly sea conditions, I prepare the meals one day before—at least, I prepare the different components to then only assemble them the next day. This gives me one day in advance, in case of rougher seas. And yes, flexibility: If the menu plan cannot work as planned, I just change it. Or, as our Captain says: “This is the plan—and the plan is dynamic.”

How is the mood on board? With all this beauty and magic around—the whales that crossed our way, the dolphins in the morning—people are verzaubert, living intensely something real and unreal at the same time: Crossing the Atlantic on a sailing ship.
